  • House Fried Rice

    I got the base for this recipe off allrecipes.  Here is the link, I think it would be great if you followed this recipe with canned shrimp and canned chicken.  http://allrecipes.com/Recipe/House-Fried-Rice/Detail.aspx

    I omitted the meat and changed the ingredients around so I am posting my version.  I watched a guy at a Japanese Steakhouse make us fried rice on the flat grill when we were in San Diego on Valentine's Day.  So I did basically the same thing in a huge skillet.  Its absolutely mouthwatering.  200 calories per 1 cup serving.


    INGREDIENTS

    • 1 1/2 cups uncooked white rice (I only use brown, it has nutrients.)
    • 3 tablespoons sesame oil
    • 1 small onion, chopped (I used a large onion, I love onion) 
    • 1 clove garlic, chopped (I used 1/2 tsp minced from a jar) 
    • 4 cups frozen peas & carrots (thaw in microwave 5 min)
    • 2 eggs
    • salt & pepper
    • 1/4 cup soy sauce

    DIRECTIONS

    1. Cook rice according to package directions. While rice is cooking, heat a wok or large skillet over medium-high heat. Pour in sesame oil and stir in onion. Fry until golden, then add garlic. Approx. 10 min.
    2. Stir in peas & carrots. Fry until vegetables are crisp-tender.  Approx. 5 min.  Push veggies to edge of pan, creating a circle in the center.  Break eggs into center of pan and salt and pepper as desired.  Stir until well scrambled and firm, then stir in veggies. 
    3. When rice is done, mix thoroughly with vegetables and stir in soy sauce. Adjust seasoning to your preference and serve immediately.
