  • Death by chocolate

    I adapted this from a recipe I found in Cooking Light Magazine.  It originally called for unsweetened baking chocolate as well as cocoa.  I subbed in all cocoa and applesauce instead of butter/oil.  Also, when I made it, I had no cream cheese in the house so I swirled in mini marshmallows instead.  This batter was rich and I could eat the whole pan.  Make it.  You know you want to.  Chocolate is a great anti-oxidant and helps lower cholesterol.  Not to mention it's a cramping girls best friend!


    1-1/2 cups flour
    1-3/4 cups sugar
    1/2 cup cocoa + 1/3 cup cocoa
    1/2 tea baking powder
    1/4 tea salt
    3/8 cup applesauce
    3/4 cup milk
    1/2 tea vanilla extract
    2 large eggs

    cooking spray
    1/2 c low fat cream cheese (4 oz)
    1/4 c sugar
    1/4 tea vanilla
    1 large egg white

    Preheat oven to 350 degrees.

    Mix dry ingredients in one bowl, wet into another (up to eggs).  Combine, stir until moistened.  Pour into a 9x13 pan sprayed with cooking spray.  Combine remaining ingredients (cream cheese to egg white)  and mix well.  Drizzle evenly over chocolate batter and swirl together using tip of a knife.

    Bake at 350 for 30 min or until batter begins to pull away from sides of pan.

    Yield: 28 servings (serving size: 1 brownie) 131 calories per serving.
